    Description:
    With this soup your kiddos get their veggies in! Even if they're not big fans of vegetables, the hot dog pieces in the soup might convince them to give the soup a try.
    My Mom used to make this soup when I was a kid. In German it's cold "Gemüseeintopf" (vegetable stew), but my husband calls it "Hot Dog Soup" because of the hot dog slices in it.

    Ingredients:
    4 medium potatoes (peeled)
    2 leeks (washed and peeled, if necessary)
    2 carrots (peeled)
    1 small onion
    1 tbsp butter
    6 hot dogs
    6 cups of broth.

    Directions:
    Peel the carrots and potatoes.
    Wash the leek, peel the outer layer off, if necessary.
    Cut onions into small pieces.
    Heat butter in pot on medium heat, add onions. Cook onions until translucent, approx. 1-2 minutes.
    Cut carrots, potatoes, and leek into small pieces. Add to pot and cook for 2-3 minutes, stir occasionally.
    Add broth.
    Bring to a boil and let simmer on low heat for approx. 20 minutes.
    Cut hot dog into slices and add to pot. Simmer for another 5 minutes.
    Season with salt and pepper.
    Soup is done when vegetables are soft (or to your liking).
