    Description: This is a super easy, inexpensive soup that is ready in less than 30 minutes. We eat toasted bread with it.

    Ingredients:
    2 jars of white asparagus
    1 small onion
    1 tbsp butter
    4 cups of broth
    1/2 cup of heavy whipping cream

    Directions:
    Open the jars and pour the asparagus water in a measuring cup. Fill the measuring cup up with broth to a total of 4 cups.
    Cut the asparagus in small pieces. The top part of the asparagus is the best, so we put those pieces in each bowl. The rest will be blended later.
    Cut the onion in small pieces.
    Add butter and onion to a pot and cook for 2 minutes on medium heat, until onions are glassy.
    Add the asparagus pieces.
    Add the broth. Bring to boil and simmer for 5 minutes.
    Remove the pot from the stove and blend everything with a hand-held blender. If you don't have a hand-held blender, carefully pour and blend everything in a blender.
    Put the pot back on the stove and bring to a boil. Let simmer for 2 minutes.
    Add heavy whipping cream and season with salt and pepper.
    Optional: garnish with chives or parsley.
